This Sweet Kale and Chicken Salad is as vibrant, nutritious, and delicious as it looks! I have made this as easy as it can possibly be for you to meal prep and you will more than likely thank me later! It consists of pre-packaged chopped salad mix with toppings and dressing, and Realgood Food Co Lightly Breaded Chicken Strips. It has never been easier to get all the fresh nutrients in your meal combined with a fantastic amount of protein. This is the perfect meal if you are trying to lose body fat, or in helping you to fill your plate with more nutritious foods to live a healthier lifestyle. What is even better, is it tastes amazing!
I understand not all of my readers will have a Costco nearby, or will even be able to purchase this 2pk of this specific kind of salad mix. That is why I will put every ingredient in this particular salad mix so you can also build it on your own if need be! Or you can use any chopped Kale salad mixes you find at the store to substitute for it! It will taste just as good I’m sure!
Here are the ingredients in the Sweet Kale Chopped Salad Kit from Costco:
7 superfoods: broccoli stalk, cabbage, kale, chicory, brussels sprouts, dried cranberries, pumpkin seeds
Poppyseed dressing
2 – 14 oz bags
I use both of the bags to make 5 meal preps for Monday through Friday lunches.

Sweet Kale & Chicken Salad
Ingredients
- 2 14oz bags Eat Smart Sweet Kale Salad Chopped Salad Kit *for substitutions see notes
- 20 oz Realgood Foods co Lightly Breaded Chicken Strips *can substitute with grilled chicken or rotisserie chicken
Instructions
- Place chicken strips into the air fryer. Heat to 330° bake for 10-12 minutes.(For conventional oven, preheat to 400° F, place frozen strips on baking sheat bake for 18-21 minutes.)
- Lay out 5 meal prep containers. Open up both bags of salad and evenly distribute the chopped salad mixture into all 5 containers. Using portion cups with lids, or small Ziploc bags, evenly distribute the pumpkin seeds and dried cranberries into 5 containers, close with lid. Place the small containers into each of the 5 meal prep containers. You will leave the dressing in the pouch it came in and only use a drizzle of it every day you are ready to eat your meal.
- Once the chicken is cooked, allow for a few minutes to cool, the in medium sized bowl you will take each chicken strip and cut them into little bite sized pieces. Place 3-4oz of chicken into 5 different Ziploc bags. Place one into each of the 5 meal prep containers.
- When you are ready to eat your meal preps, remove the bag of chicken and microwave for 20-30 seconds. Add chicken on top of the salad mixture, add the pumpkin seeds and cranberries on top, and then drizzle some dressing over the top of it all! Enjoy!
