Patriotic Fruit Pizza Cookie

A fun and festive red, white, and blue dessert for the Fourth of July!


Ingredients:

  • 1 package store-bought sugar cookie dough (enough for one large round or make dough from scratch)

  • 1 batch cream cheese frosting: 

    ·       4 oz Softened Cream Cheese

    ·       1/2 Tbs Milk

    ·       2 1/2 cups Powdered Sugar

    ·       1/2 tsp Vanilla

    ·       1/4 tsp Almond Extract

    ·       1/8 tsp Salt

  • ·       1/2 cup Softened Butter

  • Fresh blueberries (about ½ cup)

  • Fresh strawberries (about 1-2 cups), sliced


Instructions:

  1. Preheat oven according to the sugar cookie dough package directions (typically 325–350°F / 165–175°C).

  2. Prepare the crust: On a round pizza pan or large baking sheet, press the sugar cookie dough into a large, even circle, about ¼ inch thick. Leave a slight edge for crust if desired.

  3. Bake: Bake the cookie crust according to package instructions, usually around 12–16 minutes, or until lightly golden.
    Tip: Watch closely to avoid over-baking—you’re aiming for soft and chewy!

  4. Cool completely before decorating. This is important so the frosting doesn’t melt.

  5. Frosting: While the cookies are baking you can prepare the frosting. Combine butter and cream cheese in a mixing bowl, using a handheld mixer, beat until smooth. Add in the vanilla, almond extract, milk, salt, blend to combine. Then slowly add in the powdered sugar until fully incorporated.                                   
  6. Frost the cookie: Use the full batch of  cream cheese frosting. Spread evenly over the entire surface of the cooled cookie.

  7. Decorate with fruit:

    • In the upper left corner, place blueberries in rows to form the “stars” section of the flag.

    • Slice strawberries and lay them in diagonal or horizontal rows across the rest of the cookie to create red “stripes.” The white frosting will serve as the white stripes.

  8. Slice and Serve! This cookie is best served right after decorating. Use a pizza cutter or sharp knife for clean slices. *If you serve it warm, or it sits out too long the juices from the fruit will bleed onto the frosting.
