Healthy Fiesta Chicken Salad

This Healthy Fiesta Chicken Salad is so refreshing, and one of the best parts is that it’s Gluten & Dairy Free! If you’re looking for a light, delicious, anti-inflammatory, and filling meal, this is it. This has been one of my go to meal’s on my anti-inflammatory diet the past few months and it just hit’s the spot every time. Whether you are looking for gluten and dairy free options, or not, I got you, keep reading for all the different options below! 

Being on an anti-inflammatory diet can seem overwhelming, you may feel like you, “just can’t eat anything.” But with this salad I never feel like I’m lacking, or missing out, which is why I’m so excited to share it with you! 

If you are not on an anti-inflammatory diet you can add things like this to your salad if you’d like:

Shredded cheddar cheese, beans, dairy ranch dressing, corn, rice, etc.

There are a few ingredients that are necessary in this to make it feel like you aren’t “missing out” and that would be, delicious Siete Taco Seasoning and these crunchy crushed up Siete Tortilla Chips right on top! I highly suggest you make sure to add these because they make this dish what it is, crunchy and delicious. 

I love that the Siete ingredients are so good and so good for you in their taco seasoning packet:

Chile Powder, Sea Salt, Ground Dates, Tomato Powder, Garlic Powder, Nutritional Yeast, Cumin, Onion Flakes, Cassava Flour, Cream of Tartar, Black Pepper, Parsley. 

It’s also Gluten Free, Paleo, and Non Gmo as well.

This is all I do to meal prep this meal, besides prep the organic romaine lettuce. I cook the chicken with the Siete Taco Seasoning, and put one Smashed Avocado cup in 5 meal prep containers, then I prepare my salad each day with everything else. It makes meal prep a breeze and makes the salads taste fresh every single day.

These fats also improve the absorption of important vitamins, promote heart health, and help you feel fuller longer, which can prevent overeating. Healthy Fiesta Chicken Salad

Quick and Healthy Gluten & Dairy Free Anti Inflammatory Lunch Meal Prep

Ingredients
  

  • 1 large head Organic Romaine Lettuce
  • 2 large Organic Chicken Breasts
  • 1 packet Siete Taco Seasoning Mild
  • Avocado Oil Cooking Spray
  • 1/2-1 tsp Salt
  • 5 Smashed Avocado Cups
  • Primal Kitchen Ranch Dressing *Drizzle on each meal prep
  • Siete Grain Free Tortilla Chips *3-4 chips per meal prep
  • Tapatio Hot Sauce *Optional

Instructions
 

  • Slice raw chicken into one inch cubes.
  • Heat a large skillet or pan over medium-high heat.
  • Once the pan is hot, spray it lightly with avocado oil cooking spray.
  • Add the chicken to the pan in a single layer, making sure not to overcrowd the pieces. If needed, cook in batches. Sprinkle with a little salt.
  • Cook for about 4-6 minutes on one side without stirring, allowing the chicken to sear and develop a nice crust.
  • Flip the chicken pieces and cook for another 4-6 minutes, or until fully cooked through. The internal temperature should reach 165°F (75°C).
  • Add the Siete taco seasoning mix, following the instructions on the back of the packet.
  • In 5 meal prep containers you will add an equal portion of the chicken and one smashed avocado cup and place in the refrigerator.
  • Slice up one large head of organic romaine lettuce and clean with a lettuce spinner. I like to keep the fresh lettuce inside the spinner throughout the week.
  • How to assemble your salad daily: Heat the chicken for 45 seconds. Start with a generous handful of romain lettuce, add a layer of chicken, using a spoon add spoon fulls of smashed avocados around the salad, drizzle some ranch dressing over the top, crunch up 3-4 Siete grain free tortilla chips over the top and dab a little hot sauce over the top for a nice little kick! Enjoy!
