While oven is preheating add all ingredients to a mixing bowl. Make sure to melt the coconut oil for 45 seconds before adding it to the mixture.
Stir to combine all ingredients.
Lay a piece of parchment paper over a baking sheet. Scoop the granola mixture onto the parchment paper and spread out into a thin layer.
Bake for 25-30 minutes, or until the edges start to turn slightly brown.
Allow to cool completely before breaking it up into small bite sized pieces.
Store in a ziplock bag, or an air tight container. Enjoy!
