Preheat oven to 400°. Peel sweet potatoes, sliced potatoes into ½-1 inch cubes. Place cubed sweet potatoes into a large bowl. Add Olive oil, salt, pepper, onion powder, garlic powder. Stir to combine. Lay parchment paper onto a baking sheet and add potatoes, spread out evenly. Bake for 25-35 minutes. Depending on the size of sweet potatoes will depend on shorter amount of time or longer. Once a fork can easily pierce through the center they are done.
Warm up Siete tortillas on a skillet for 15-20 seconds on either side, then set aside. *If using flour tortillas, skip this step.
Spray a skillet with non-stick cooking spray and add ham. Let ham cook on medium/high heat on the stove for 4-5 minutes, stirring to brown.
Once ham has been cooked through and browned, add 5 eggs, 5 egg whites, salt and pepper to the skillet. Use a spatula to stir eggs and ham until they are cooked through.
Lay out all 5 tortillas. Place an even amount of ham and eggs on all tortillas, in the center of the tortilla. Sprinkle with cheese, and add an even amount of sweet potatoes on top of the egg mixture.
Roll up each individual tortilla. Roll in seran wrap for refrigerator storage, or place all 5 in an air tight container and remove one daily for 5 days. When you are ready to eat, heat for 30-60 seconds in the microwave. Enjoy!
