Paleo Chocolate Chip Cookies

Ingredients
  

  • 1/2 cup Almond Butter * + 2Tbs
  • 1/2 cup Tahini Paste
  • 3/4 cup Coconut Sugar
  • 3 tbsp Melted Coconut Oil
  • 3 Eggs
  • 2 tbsp Honey
  • 1/2 cup Coconut Flour
  • 1/4 cup Arrowroot Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Vanilla
  • 1 cup Semi-Sweet or Dark Chocolate Chips

Instructions
 

  • Preheat oven to 350 degrees.
  • Add eggs to mixer and beat for 30 seconds. Add melted coconut oil and coconut sugar. Blend until combined.
  • Add in the honey and vanilla. Mix till combined. Add the almond butter and Tahini paste, mix well.
  • Sprinkle the salt and baking soda over the batter, then add the Coconut Flour. Blend, then slowly add in the Arrowroot Flour. Mix till all ingredients are combined, batter will be sticky.
  • Add the chocolate chips to the batter and mix.
  • Line a baking sheet with parchment paper. Use cooking spray or coconut oil to coat a small 1-2 Tbs cookie dough scooper, or a spoon. This step is necessary, because the dough is sticky.
  • Scoop 12 cookies onto the parchment paper on the cookie sheet, a few inches apart. Bake at 350 degrees for 10-12 minutes.
  • Let cookies cool on a cooling rack for several minutes,then enjoy.

Notes

*When I meal prep these I put several freezer gallon ziplock bags full of cookies into the freezer and they stay fresh for as long as necessary. Delicious right out of the freezer or right after baking. Pour a glass of almond milk and enjoy this decadent paleo dessert, or breakfast.
