In a medium sized mixing bowl, add yogurt, protein powder, lemon juice, almond milk, and pudding powder. Stir for several minutes till it is combined and has a smooth texture.
Place graham crackers into a Ziploc Bag and close. Using a rolling pin, or other hard kitchen utensil, gently crush the graham crackers until they are small bits.
Place 7 parfait cups onto the counter. Using a 1/4-1/2 measuring cup, scoop equal amounts of the yogurt mixture into each parfait cup. Place the insert in, and scoop equal amounts of graham cracker into each insert. Place the lid on top.
Store in the refrigerator for up to 7 days. Enjoy!
Notes
You can use any vanilla or plain yogurt you like. A great option would be Plain Non-Fat Greek Yogurt, for some added protein!You can use gluten free graham crackers, or regular for this recipe.
