Honey Garlic Chicken Meal Prep

Combining honey, garlic, and soy sauce to make the yummiest chicken meal prep!

Ingredients
  

Honey Garlic Chicken

  • 3 Chicken Breasts *thawed
  • 4 Tbs Honey
  • 2 Tbs Soy Sauce
  • 1 tsp Garlic *minced
  • 1 tsp Onion Powder
  • Salt *to taste
  • Pepper *to taste
  • 1 Tbs Extra Virgin Olive Oil
  • 1 Tbs Lemon Juice
  • 1 tsp Parsley

Edamame

  • 15 oz Steamable Edamame Soy Beans *If shelled, remove all soybeans from the pods

Rice

  • 2 cups Minute Rice
  • 2 cups Water
  • 1/2 tsp Salt
  • Pepper *to taste

Garnish

  • Sesame Seeds

Instructions
 

  • Add 2 cups minute rice and 2 cups water to a microwave safe bowl, cover with lid, leaving a small side open for venting. Cook for 9 minutes. Once finished let it rest for 5 minutes before you fluff with a fork, sprinkle with 1/2 tsp salt and pepper to taste.
  • While the rice is cooking, add honey, soy sauce, minced garlic, onion powder, extra virgin olive oil, lemon juice, and parsley, into a small bowl, stir to combine. Set aside.
  • Slice chicken into small cubes. Spray cooking spray onto a skillet and turn the heat to medium high heat. Add the chicken to the skillet, sprinkle with 1 tsp of salt and a dash of black pepper, stir to combine, and cook for 4 minutes. After the first 4 minutes, turn the pieces of chicken over to the other side to cook for an additional 4 minutes, pouring the sauce mixture over the chicken to cook the last few minutes. Make sure the internal temperature of the chicken is 165° when done cooking.
  • Place steamable soybeans into the microwave and cook according to the package directions. If they are still shelled, after cooking and cooling, remove the soybeans from the pods and place in a bowl. Season with a little salt and pepper to taste.
  • Once everything is cooked, place 5 meal prep containers on the counter. Put equal parts rice, soybeans, and honey garlic chicken into each container. Sprinkle on a dash of sesame seeds and make sure the lid is on tight.
  • Store in the refrigerator for up to 5 days. When you’re ready to eat your meal prep each day, heat in the microwave, and enjoy!

Notes

*Substitute Edamame with broccoli, carrots, or any other veggies you like!
