Healthy Banana Chocolate Chip Muffins

The perfect breakfast, snack, or dessert to add to your healthy foods list! These Paleo Banana Chocolate Chip Muffins are absolutely delicious!

Ingredients
  

  • 2 Ripe Bananas
  • 2 Eggs
  • 1 Cup Almond Butter
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2-3 Tbs Honey
  • 1 Tbs Cinnamon
  • 1/2-1 Cup Dark Chocolate Chips *or Semi Sweet Chocolate Chips

Instructions
 

  • Preheat the oven to 375°.
  • Peel and drop ripe bananas into the blender. Blend until smooth. Add in eggs, vanilla, baking soda, honey, and cinnamon. Blend until all ingredients are combined.
  • Add the almond butter, and blend one more time till combined.
  • With a large spoon or spatula, stir in the chocolate chips, do not blend.
  • Line a muffin tin with muffin liners, or spray with cooking spray. Spoon batter into liners until they are about 1/2 full.
  • Once the oven is preheated, place the muffins in the oven and bake for 13-15 minutes. Once a toothpick inserted comes out clean the muffins are done. Let the muffins cool on a cooling rack till enjoyed!

Notes

Servings: 16-24 muffins, if filled half full!
*Storing in the refrigerator will keep the muffins fresh longer. 
Muffins are good stored in an air tight container for 7 days.
