Preheat oven to 350°F. Grease 9x13 inch baking dish and set aside.
Brown the Ham in a skillet, set aside.
Prepare the egg mixture. In a large bowl whisk together the egg whites, whole eggs, milk, onion powder, garlic powder, 1/2 tsp salt.
In the prepared baking dish combine the hash brown potatoes, ham, 1/2 cup cheese, and the remaining salt. Pour egg mixture over the top.
Combine the egg mixture with the hash browns mixture. Sprinkle the top with the green part of the scallions and the remainder of the cheese.
Cover the baking dish tightly with tin foil.
Bake for 50 minutes. Remove the foil and continue baking for another 15 minutes, until a knife comes out clean from the center of the dish. Let stand for 5-10 minutes before serving.
Notes
For meal prep: Let stand after baking for 10 minutes. Get out 6 meal prep containers. Cut the casserole into 6 equal parts, placing one serving each per container. Refrigerate up to 6 days.
