Breakfast Casserole

Ingredients
  

  • 5 Egg Whites
  • 5 Whole Eggs
  • 3/4 bag Simply Potatoes Shredded Potatoes
  • 1 cup Shredded Cheese
  • 1 cup Diced Ham
  • 3/4 cup Milk Lactaid, or Almond Milk.
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 3 Scallions Green part, chopped.

Instructions
 

  • Preheat oven to 350°F. Grease 9x13 inch baking dish and set aside.
  • Brown the Ham in a skillet, set aside.
  • Prepare the egg mixture. In a large bowl whisk together the egg whites, whole eggs, milk, onion powder, garlic powder, 1/2 tsp salt.
  • In the prepared baking dish combine the hash brown potatoes, ham, 1/2 cup cheese, and the remaining salt. Pour egg mixture over the top.
  • Combine the egg mixture with the hash browns mixture. Sprinkle the top with the green part of the scallions and the remainder of the cheese.
  • Cover the baking dish tightly with tin foil.
  • Bake for 50 minutes. Remove the foil and continue baking for another 15 minutes, until a knife comes out clean from the center of the dish. Let stand for 5-10 minutes before serving.

Notes

For meal prep: Let stand after baking for 10 minutes. Get out 6 meal prep containers. Cut the casserole into 6 equal parts, placing one serving each per container. Refrigerate up to 6 days. The perfect breakfast meal prep! Quick and easy to grab, warm up, and go!
