BBQ Meatball Meal Prep
Add 2.5 cups minute rice and 2.5 cups water to a microwave safe bowl, cover with lid leaving a small side open for venting. Cook for 9 minutes. Once finished let it rest on the counter for 5 minutes before you fluff with a fork.
Put 20 frozen fully cooked Costco meatballs onto a microwave safe plate and cook for 4 minutes in the microwave.
Once the rice and meatballs are cooked, place Steamfresh Vegetables in microwave and cook according to the package directions.
Using a measuring cup, scoop ½ cup of rice into all 5 containers. Place 4 meatballs into the other half of the container, use a ¼ measuring cup to scoop veggies and place into container. Once all 3 things have been added, sprinkle on a little salt for the veggies and rice, and drizzle some delicious bbq sauce over the meatballs.
Cover with container lids and store in the refrigerator, eating one meal for lunch per day.
Notes
*If you are In a bulk phase, double the rice and add a few more meatballs to your meal.*You can add soy sauce to the rice daily, for a yummy burst of flavor.
