Breakfast Burrito Meal prep

This protein packed, breakfast burrito meal prep is everything you’re looking for to fuel your morning. For years I would get a pan out every single day and make meals like this every morning, but why?! So many dishes! I wish I would have started making these delicious breakfast burrito meal preps sooner!

My husband and I use two different types of tortillas for our burrito’s. He uses the regular flour fajita sized tortillas, and I use the gluten free almond flour tortillas made by Siete. Both work perfectly for this meal prep! 

You only need one skillet for this meal. We buy pre-cubed ham to make it even easier. You can find this at most grocery stores. The ham add’s a sweet and savory flavor to these yummy burritos! Prepping these ahead of time saves you the hassle of doing extra dishes every single day! We like to prep these on Sunday’s to have for breakfast Monday through Friday for the week.

We use a mix of full eggs and carton egg whites. My favorite thing to do is brown the ham in the skillet first, then when its removed we add the eggs and egg whites right to the pan to get even more flavor into the eggs. 

You can use any cheese you would like for these burritos, but our favorites are mild cheddar or sharp cheese. I personally love sharp cheddar because it adds another whole element of flavor to the meal!

These would be a perfect morning meal prep for your kids/teens to simply warm up in the mornings. If you are a college student, or work early, there isn’t anything better than a meal that tastes freshly made, full of flavor, and as simple as heating it up in the microwave before you go! 

If you’ve never tried these delicious almond flour Siete Tortillas, you must! If you use them for this meal prep make sure to heat them on both sides in the skillet before adding the ingredients! I love the flavor these have, and its perfect for those that need a gluten free option. I have used corn tortillas in the past for this meal prep and it works ok, they do break apart a little, but these Siete tortillas hold up pretty well! Breakfast Burrito Meal Prep

Ingredients
  

  • 5 Flour Tortillas or Siete Almond Flour Tortillas
  • 5 Whole Eggs
  • 5 Egg whites Carton Egg Whites
  • 1 cup Cubed Ham
  • 1/2 cup Shredded Cheddar Cheese
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions
 

  • Warm up tortillas for 15-20 seconds on either side, then set aside.
  • Spray a skillet with non-stick cooking spray and add ham. Let ham cook on medium/high heat on the stove for 4-5 minutes, stirring to brown.
  • Once ham has been cooked through and browned, add 5 eggs, 5 egg whites, salt and pepper to the skillet. Use spatula to stir eggs and ham until they are cooked through.
  • Lay out all 5 tortillas. Place an even amount of ham and eggs on all tortillas, in the center of the tortilla. Then sprinkle the cheese, equally over all 5.
  • Roll up each individual tortilla. Roll in seran wrap for refrigerator storage, or place all 5 in an air tight container and remove one daily for 5 days. When you are ready to eat, heat for 30-60 seconds in the microwave.

Notes

You can use turkey, ham, bacon, or sausage for these breakfast burritos.
