Sweet Potato Breakfast Burrito Meal Prep: If you are one of those people who need a convenient and healthy breakfast option that doesn’t compromise on taste, then you have to try these delicious Sweet Potato Breakfast Burritos! The ingredients required for this recipe are everyday pantry staples that include sweet potatoes, eggs, cheese, meat, and tortillas. Begin by washing and peeling the sweet potatoes and dicing them into small pieces. Then, you will bake them in the oven until they are fork tender. While those are baking, you will brown the diced ham and scramble the eggs into the ham. Then it’s time to assemble. Lay out your tortilla, add the egg mixture, sprinkle a little cheese over the top and then add the sweet potatoes on top! It’s that easy!

 Make sure to fill the tortilla up halfway to leave enough space to roll it easily. Roll the burritos tightly, wrap them up snugly in plastic wrap, or place them in meal prep containers, and stick them in the refrigerator until you’re ready to enjoy them.

Sweet Potato Breakfast Burrito

This recipe is simple, convenient, and perfect for anyone with a chaotic schedule!

  • Baking Sheet
  • Parchment Paper
  • Large Bowl

Ingredients
  

  • 5 Flour Tortillas or Siete Almond Flour Tortillas
  • 5 Whole Eggs
  • 5 Egg whites Carton Egg Whites
  • 1 cup Cubed Ham
  • 1/2 cup Shredded Cheddar Cheese
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Sweet Potatoes

  • 1 Medium Sweet Potatoes
  • ½-1 tsp Salt
  • ¼ tsp Black Pepper
  • 1 Tbs Olive oil
  • 1 tsp Onion Powder
  • ½ tsp Garlic Powder

Instructions
 

  • Preheat oven to 400°. Peel sweet potatoes, sliced potatoes into ½-1 inch cubes. Place cubed sweet potatoes into a large bowl. Add Olive oil, salt, pepper, onion powder, garlic powder. Stir to combine. Lay parchment paper onto a baking sheet and add potatoes, spread out evenly. Bake for 25-35 minutes. Depending on the size of sweet potatoes will depend on shorter amount of time or longer. Once a fork can easily pierce through the center they are done.
  • Warm up Siete tortillas on a skillet for 15-20 seconds on either side, then set aside. *If using flour tortillas, skip this step.
  • Spray a skillet with non-stick cooking spray and add ham. Let ham cook on medium/high heat on the stove for 4-5 minutes, stirring to brown.
  • Once ham has been cooked through and browned, add 5 eggs, 5 egg whites, salt and pepper to the skillet. Use a spatula to stir eggs and ham until they are cooked through.
  • Lay out all 5 tortillas. Place an even amount of ham and eggs on all tortillas, in the center of the tortilla. Sprinkle with cheese, and add an even amount of sweet potatoes on top of the egg mixture.
  • Roll up each individual tortilla. Roll in seran wrap for refrigerator storage, or place all 5 in an air tight container and remove one daily for 5 days. When you are ready to eat, heat for 30-60 seconds in the microwave. Enjoy!

Notes

You can use turkey, ham, bacon, or sausage for these breakfast burritos.
