Turkey Sausage Breakfast Casserole

I’m so excited to share this recipe with you guys! This Turkey Sausage breakfast casserole is incredibly easy to make, and is so tasty! This is ideal for making your weekly breakfast meal prep, or it can also be made for a simple breakfast, large enough for a group of people!

The spices  in this dish just take the flavor to a whole different level! The cheese add’s a nice flavor, but if you are dairy free you can make this dish without cheese and substitute the milk for lactaid or almond milk, it will still be so tasty!

We make this meal prep on Sunday and it lasts Monday through Friday. You will just warm it up in the microwave each morning and you’re good to go!

Anything to make the morning rush a little easier, while getting in a healthy meal is the only way to go.

Turkey Sausage Breakfast Casserole

A healthy and delicious breakfast you can meal prep ahead of time!

  • 9×13 Baking Dish

Ingredients
  

  • 5 Egg Whites
  • 5 Whole Eggs
  • 3/4 bag Simply Potatoes Shredded Potatoes
  • 1 cup Shredded Cheese
  • 5 links Turkey Sausage *Jimmy Dean Fully Cooked
  • 3/4 cup Milk *substitute with Lactaid or Almond Milk
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1 tsp Parsley *dried or fresh

Instructions
 

  • Preheat oven to 350°F. Grease 9×13 inch baking dish and set aside.
  • Slice the turkey sausage into small bite sized pieces. Brown the turkey sausage in a skillet, set aside.
  • Prepare the egg mixture. In a large bowl whisk together the egg whites, whole eggs, milk, onion powder, garlic powder, 1/2 tsp salt and 1/2 tsp parsley.
  • In the prepared baking dish combine the hash brown potatoes, turkey sausage, 1/2 cup cheese, and the remaining salt. Pour egg mixture over the top.
  • Combine the egg mixture with the hash brown mixture. Sprinkle the top with the the remainder of the cheese, and 1/2 tsp parsley.
  • Cover the baking dish tightly with tin foil.
  • Bake for 50 minutes. Remove the foil and continue baking for another 15 minutes, until a toothpick or knife comes out clean from the center of the dish. Let stand for 5-10 minutes before serving.
  • Cut evenly and add slices into meal prep containers. Store in the refrigerator for up to 7 days. Enjoy!

Notes

For meal prep: Let stand after baking for 10 minutes. Get out your meal prep containers. Cut the casserole into equal parts, placing one serving each per container. Refrigerate up to 7 days. The perfect breakfast meal prep! Quick and easy to grab, warm up, and go!
