This Vanilla Gluten & Dairy Free Granola is perfect for breakfast or an afternoon snack! You will not believe how easy it is to make, and how delicious your house will smell while it’s cooking! The warm cinnamon mixed with vanilla is the perfect combo for this granola! It’s even better that it is Gluten and Dairy free!
Granola is perfect to pair with yogurt for breakfast, or sprinkle onto a smoothie bowl. My kids like to simply grab a handful and eat it as a snack! There is no wrong way to eat this granola! My kids asked me if I could make this granola into granola bars, I’ve never tried! So stay tuned when I decide to tackle homemade granola bars! Yum!
My favorite part about this granola is you simply add all the ingredients into a bowl and stir to combine. One bowl, mix the ingredients, and then add it to the parchment lined baking sheet. Bake it at 300° for 25-30 minutes, or until the edges start to turn slightly brown. Then let it cool completely, break it into smaller pieces and you’re done! Healthy and delicious granola that is the easiest thing to make! Even your kids will love it!
This week I decided to forego meal prepped breakfast and have a protein smoothie with a little bowl of this yummy granola and it is just perfection.
If you’ve never made homemade granola you will find out it always feels soft to the touch when it first comes out of the oven, but don’t worry, as it cools it will harden. Perfect for breaking it apart into small bite sized pieces!

Vanilla Gluten & Dairy Free Granola
Equipment
- Mixing Bowl
- Parchment Paper
- Baking Sheet
Ingredients
- 2 cups Gluten Free Oats
- 1 cup Chopped Walnuts or Almonds
- ¼ cup Melted Coconut Oil
- 1/3 cup Honey
- 1 tsp Cinnamon
- 1 Tbs Vanilla Extract
Instructions
- Preheat oven to 300°.
- While oven is preheating add all ingredients to a mixing bowl. Make sure to melt the coconut oil for 45 seconds before adding it to the mixture.
- Stir to combine all ingredients.
- Lay a piece of parchment paper over a baking sheet. Scoop the granola mixture onto the parchment paper and spread out into a thin layer.
- Bake for 25-30 minutes, or until the edges start to turn slightly brown.
- Allow to cool completely before breaking it up into small bite sized pieces.
- Store in a ziplock bag, or an air tight container. Enjoy!
