Breakfast Ham and Potato Casserole

I am so excited to share this recipe with you! I’ve been trying to create the perfect breakfast meal prep for so long. It has all your favorite breakfast foods in one perfectly tasty dish!

This makes breakfast meal prep so easy. Ham, cheese, hashbrowns, eggs, spices, and aroma. You get to experience this for the next 5 days!

Look how beautiful this is, I wish you could taste it right now! It’s as simple as whisking the eggs, sautéing the ham, mixing in the rest of the ingredients and topping with beautiful green shallots.

I make this meal prep on Sunday, and it lasts me Monday through Friday. I just warm it up in the microwave and good to go! Anything to make the morning rush easier, while getting in a healthy meal is the only way to go.

Breakfast Casserole

  • 9x13 Baking Dish

Ingredients
  

  • 5 Egg Whites
  • 5 Whole Eggs
  • 3/4 bag Simply Potatoes Shredded Potatoes
  • 1 cup Shredded Cheese
  • 1 cup Diced Ham
  • 3/4 cup Milk Lactaid, or Almond Milk.
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 3 Scallions Green part, chopped.

Instructions
 

  • Preheat oven to 350°F. Grease 9x13 inch baking dish and set aside.
  • Brown the Ham in a skillet, set aside.
  • Prepare the egg mixture. In a large bowl whisk together the egg whites, whole eggs, milk, onion powder, garlic powder, 1/2 tsp salt.
  • In the prepared baking dish combine the hash brown potatoes, ham, 1/2 cup cheese, and the remaining salt. Pour egg mixture over the top.
  • Combine the egg mixture with the hash browns mixture. Sprinkle the top with the green part of the scallions and the remainder of the cheese.
  • Cover the baking dish tightly with tin foil.
  • Bake for 50 minutes. Remove the foil and continue baking for another 15 minutes, until a knife comes out clean from the center of the dish. Let stand for 5-10 minutes before serving.

Notes

For meal prep: Let stand after baking for 10 minutes. Get out 6 meal prep containers. Cut the casserole into 6 equal parts, placing one serving each per container. Refrigerate up to 6 days. The perfect breakfast meal prep! Quick and easy to grab, warm up, and go!
