Cinnamon Protein Yogurt Parfaits: Do you often find yourself rushing in the morning with little to no time to eat a balanced breakfast and end up indulging in unhealthy fast food? We like to eat these yummy parfait’s as a quick breakfast, or a high protein afternoon snack!

To make these tasty protein yogurt parfaits, start by mixing your  yogurt of choice and protein powder until it is well combined. Then, you will bake the delicious Vanilla Gluten & Dairy Free Granola . Sprinkle an extra dash of cinnamon on top of the yogurt and drizzle honey for added sweetness. You get to add the yogurt mixture and granola (in the insert) into each meal prep parfait container, and store in the fridge for up to 7 days!

Cinnamon Granola Protein Yogurt Parfait

Healthy meets delicious for these grab and go yogurt parfaits!

Ingredients
  

Cinnamon Yogurt

  • 24 oz Greek Yogurt or Dairy Free Yogurt
  • 4 Scoops MyProtein Cinnamon Cereal Protein Powder
  • 1/2 Package Jell-o Vanilla Sugar Free & Fat Free Pudding Mix *Optional

Vanilla Gluten and Dairy Free Granola

  • 2 cups Gluten Free Oats
  • 1 cup Chopped Walnuts or Almonds
  • ¼ cup melted coconut oil
  • 1/3 cup honey
  • 1 tsp cinnamon
  • 1 Tbs Vanilla Extract

Instructions
 

Yogurt Mixture

  • In a medium sized mixing bowl, add yogurt, protein powder, and pudding powder. Stir for several minutes till it is combined and has a smooth texture.

Vanilla Gluten and Dairy Free Granola

  • Preheat oven to 300°
  • While oven is preheating add all granola ingredients to a mixing bowl.
  • Stir to combine all ingredients.
  • Lay a piece of parchment paper over a baking sheet. Scoop the granola mixture onto the parchment paper and spread out into a thin layer.
  • Bake for 25-30 minutes, or until the edges start to turn slightly brown.
  • Allow to cool for 10-15 minutes before breaking it up into small, bite sized pieces.
  • Place 7 parfait cups onto the counter. Using a 1/4-1/2 measuring cup, scoop equal amounts of the yogurt mixture into each parfait cup. Place the insert over the yogurt and add a handful of Granola into each insert.
  • Place the lid on top of each parfait. Store in the refrigerator for up to 7 days. Enjoy!

Notes

You can use any vanilla or plain yogurt you like. A great option would be Plain Non-Fat Greek Yogurt, for some added protein!
For Dairy Free Yogurt I like to use Silk Almond Milk Yogurt or So Delicious Coconut Milk Yogurt.
If Greek Yogurt is too thick, add a splash of milk when mixing!
