Lemon Pie Protein Yogurt Parfait

These Lemon Pie Protein Yogurt Parfaits are absolutely delicious. They make the perfect afternoon snack filled with a good amount of protein.  I also love the bright lemony flavor. Who doesn’t love a delicious lemon pie? Let’s make these instead, for less fat, sugar, and calories, while still having a delicious sweet treat!

When I make these parfaits, I use the full carton of Silk Almond Milk Yogurt and I can usually get 7 prepped parfaits. You can totally use any kind of vanilla or plain yogurt you’d like though! Plain Non-fat Greek Yogurt would be a great option because it would give you even more protein! If you can find a carton that has 24oz that would be perfect, or you can also measure out 3 cups of yogurt to make these 7 parfaits. Each parfait has about 1/2 cup of the yogurt mixture.

For the mix-in on these parfaits, I used gluten free Graham Crackers. You can put 1-2 into a closed Ziploc bag and crush them with a rolling pin until they are small pieces. You can use regular Graham Crackers as well, they don’t need to be gluten free!

Lemon Cream Pie Protein Yogurt Parfait

Ingredients
  

  • 24oz Silk Yogurt *One 24oz container
  • 4 Scoops MyProtein Vanilla Protein Powder
  • 3-4 Tbs Lemon Juice
  • 1/4 Cup Almond Milk
  • 1/2 Package Jell-o Lemon Sugar Free & Fat Free Pudding Mix
  • 2 Graham Crackers *Crushed

Instructions
 

  • In a medium sized mixing bowl, add yogurt, protein powder, lemon juice, almond milk, and pudding powder. Stir for several minutes till it is combined and has a smooth texture.
  • Place graham crackers into a Ziploc Bag and close. Using a rolling pin, or other hard kitchen utensil, gently crush the graham crackers until they are small bits.
  • Place 7 parfait cups onto the counter. Using a 1/4-1/2 measuring cup, scoop equal amounts of the yogurt mixture into each parfait cup. Place the insert in, and scoop equal amounts of graham cracker into each insert. Place the lid on top.
  • Store in the refrigerator for up to 7 days. Enjoy!

Notes

You can use any vanilla or plain yogurt you like. A great option would be Plain Non-Fat Greek Yogurt, for some added protein!
You can use gluten free graham crackers, or regular for this recipe.
