Paleo Chocolate Chip Cookies
Early on in my fitness journey I was doing crossfit 5 days a week and loving it. I was introduced to the Paleo diet, something I had never heard of before, and was invited to do a 30 day challenge. What I wasn’t prepared for was how good my body felt eating this way.
Paleo is such a good, clean way of eating that I am so glad I have tried and know about. While it is difficult to eat this way 100% of the time I try my best to eat paleo based meals as often as I can.
While I was trying to eat more paleo I knew I needed to find some type of sweet treat to keep my sweet tooth happy. I tried countless paleo dessert recipes, and let me tell you, a lot of them were not that great.
I then found a chocolate chip cookie recipe that kind of tasted good, I was shocked! I decided to change up a few ingredients, play around with the time baked, etc, and voila. I created the most amazing Paleo Chocolate Chip Cookie recipe out there. There are a few ingredients I didn’t have in my pantry when I first wanted to try these, so I will link them here for you to easily find!
This recipe is so dang good I have made it in large, meal prep, batches for at least 7-8 years. Believe it or not, I eat one of these cookies and a pre workout drink every single day as pre workout fuel.
Can you believe I get to eat a cookie before a workout and don’t feel the slightest bit worried about?! It has been an absolute game changer in my world and I hope it is in your world too!
Whenever I make these, I usually do a double or triple batch. I put the cookies in layers with parchment paper in between and I freeze a couple bags to slowly get out and eat, as desired.

Paleo Chocolate Chip Cookies

Ingredients
- 1/2 cup Almond Butter * + 2Tbs
- 1/2 cup Tahini Paste
- 3/4 cup Coconut Sugar
- 3 tbsp Melted Coconut Oil
- 3 Eggs
- 2 tbsp Honey
- 1/2 cup Coconut Flour
- 1/4 cup Arrowroot Flour
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Vanilla
- 1 cup Semi-Sweet or Dark Chocolate Chips
Instructions
- Preheat oven to 350 degrees.
- Add eggs to mixer and beat for 30 seconds. Add melted coconut oil and coconut sugar. Blend until combined.
- Add in the honey and vanilla. Mix till combined. Add the almond butter and Tahini paste, mix well.
- Sprinkle the salt and baking soda over the batter, then add the Coconut Flour. Blend, then slowly add in the Arrowroot Flour. Mix till all ingredients are combined, batter will be sticky.
- Add the chocolate chips to the batter and mix.
- Line a baking sheet with parchment paper. Use cooking spray or coconut oil to coat a small 1-2 Tbs cookie dough scooper, or a spoon. This step is necessary, because the dough is sticky.
- Scoop 12 cookies onto the parchment paper on the cookie sheet, a few inches apart. Bake at 350 degrees for 10-12 minutes.
- Let cookies cool on a cooling rack for several minutes,then enjoy.
