It does not get easier than this meal prep right here. Literally 5 ingredients and get this! All of it can be cooked using the microwave! My husband and I devour this when we make it. The bbq sauce adds a yummy flavor making this meal prep filling, and delicious. We come back to this meal prep every time we want to whip up lunch prep fast, with as little prep work, and dishes as possible.
We get the most amazing meatballs from Costco in the freezer section, called Cooked meatballs, Italian Style Beef. They are already cooked through, just need to be heated up! That’s what I like to hear when I don’t want to cook raw meat! They are already packed with flavor, we use them for spaghetti night in our house as well! You can cook any fresh or frozen meatballs for this meal prep, or you can totally make your own if you’ve got the time!
If you want delicious, quick and easy rice, my go to is always Minute Rice. You can buy the large bulk box at Costco as well. I love this because it is so easy to make, the same rice to water ratio and cooks itself in the microwave, no rice cooker needed. You also don’t have to sit at the stove watching to make sure your rice doesn’t burn! This is why we use minute rice all the time, its quick and yummy! We just cook in the microwave with the microwaveable instructions on the box!
Let’s talk veggies. You can cook fresh or frozen veggies for this, but our go to is the frozen steamable Steamfresh mixed veggies. They come out perfect everytime, and all you need to do is pop the bag in the microwave and voila, done! No need to cut or chop veggies and steam on the stove, the microwave will do for this quick and easy meal prep.
I am so glad I was turned on to this delicious BBQ sauce. It is made by Ray’s, called Hickory Barbeque Sauce, NO SUGAR ADDED! I love that this sauce isn’t thick and full of etra added sugar making it heavy and too sweet. They made this BBQ sauce taste absolutely delicious without added all the extra stuff!
BBQ Meatball Meal Prep
Ingredients
- 2.5 cups Minute Rice
- 20 Meatballs
- 1 bag of Steamfresh Mixed Vegetables
- 1 tbsp Ray’s No Sugar Added Hickory BBQ sauce *per container
Instructions
BBQ Meatball Meal Prep
- Add 2.5 cups minute rice and 2.5 cups water to a microwave safe bowl, cover with lid leaving a small side open for venting. Cook for 9 minutes. Once finished let it rest on the counter for 5 minutes before you fluff with a fork.
- Put 20 frozen fully cooked Costco meatballs onto a microwave safe plate and cook for 4 minutes in the microwave.
- Once the rice and meatballs are cooked, place Steamfresh Vegetables in microwave and cook according to the package directions.
- Using a measuring cup, scoop ½ cup of rice into all 5 containers. Place 4 meatballs into the other half of the container, use a ¼ measuring cup to scoop veggies and place into container. Once all 3 things have been added, sprinkle on a little salt for the veggies and rice, and drizzle some delicious bbq sauce over the meatballs.
- Cover with container lids and store in the refrigerator, eating one meal for lunch per day.
