Cinnamon Roll Energy Bites

What could possibly be better than these delicious Cinnamon Roll Energy Bites! They are incredibly simple to make, and can last up to 2 weeks in the refrigerator! Perfect for popping in your mouth for an afternoon snack, or a simple and healthy dessert at the end of the night. That drizzle of white chocolate on top just makes these so decadent.

Here is the ingredient list, clean and simple:

½ cup Almond Butter

1-2 scoops Vanilla Protein Powder

1 ½ tsp Cinnamon

1 tsp Vanilla

1/3 cup Old Fashioned Oats

3 Tbs Maple Syrup

¼ cup White Chocolate Chips

All you need to do is combine the ingredients, (minus the white chocolate chips) into a mixing bowl till they are fully combined. Roll into 12 individual balls, then melt the chocolate chips and drizzle over the top! This recipe makes 12 energy bites!

Cinnamon Roll Energy Bites

These taste like actual Cinnamon rolls, but are packed with healthy ingredients!

Equipment

  • Medium Mixing Bowl
  • Small Bowl
  • Cookie Scoop or Spoon

Ingredients
  

Energy Bites

  • ½ cup Almond Butter
  • 2 scoops Vanilla Protein Powder
  • 1 ½ tsp Cinnamon
  • 1 tsp Vanilla
  • 1/3 cup Old Fashioned Oats
  • 3-4 Tbs Maple Syrup

Topping

  • 3 Tbs White Chocolate Chips *Melted

Instructions
 

  • Add all the ingredients, except the white chocolate chips, to a mixing bowl, stir to combine.
  • Using a small cookie scoop or spoon, scoop 12 equal sized balls. Use your hands to finish molding them into balls, set aside.
  • In a small bowl, heat the white chocolate chips in 30 second intervals in the microwave. Stir after each interval until the chocolate is smooth. You can use a spoon to drizzle the white chocolate over each energy bite, or add the chocolate to a small Ziploc bag, cut the bottom corner open and drizzle over the energy bites!
  • Carefully place all 12 Energy Bites into a glass container. Store in the airtight container in the refrigerator for up to 2 weeks. Enjoy!

Notes

You can substitute melting the white chocolate chips, with simply adding the white chocolate chips into the dough mixture, then rolling into balls! Both ways are delicious! Be sure to share this recipe with a friend!
