Greek Pita Bowl Meal Prep

Greek Pita Bowls: If you’re craving a meal that’s delicious AND healthy, look no further than these Greek Pita Bowl’s. They have all the tasty ingredients you associate with Greek cuisine, like fresh veggies and feta cheese. You can even choose your own protein, but we like to use this delicious Lemon Marinated Chicken. My husband likes to eat his with a Whole Wheat Pita and I prefer mine as just the bowl with a little extra rice! Whether you’re looking for a satisfying lunch or dinner, this won’t disappoint!

Greek cuisine is known for its fresh and flavorful ingredients, as well as its emphasis on sharing meals with others. Some popular ingredients in Greek dishes are olive oil, tomatoes, feta cheese, olives, and other herbs and spices. You can add tomatoes and olives to this meal prep if you’d like to! Overall, Greek cuisine is seen as healthy, diverse, and full of bold flavors. This is the first Greek Meal Prep we’ve tried and it’s absolutely delicious.

We like to prepare most of our meals in advance. You can also save money since you can buy food in large quantities and decrease waste, it also makes it so you don’t need to eat out as often.

We like to get the large box of Minute Rice from Costco, as well as our Chicken. In the fresh packaged meat section they have 6 small packages of around 2 large chicken breasts per package that are awesome. I bring them home, and cut along the scissor seam so that I then have 6 individual packages that I can place in the freezer. I will get one or two packages out the day before I want to meal prep to start thawing the chicken in the fridge, it leaves no mess at all! However, you can also defrost the frozen packages of meat in the microwave when you are ready to meal prep

Greek Pita Bowl Meal Prep

Ingredients
  

Greek Lemon Chicken

  • 1 Tbs Extra Virgin Olive Oil
  • 1 tsp Garlic
  • 2 tsp Lemon Juice
  • 1 tsp Thyme
  • 1 tsp Dijon Mustard
  • 1 tsp Salt
  • ¼ cup Chicken Broth

Greek Lemon Rice

  • 2 cups Minute Rice
  • 1 ¾ cups Chicken Broth
  • ¼ cup Lemon Juice
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 Tbs Parsley
  • ¼ tsp Dried Oregano
  • ¼ tsp Black Pepper
  • ¼ tsp Cumin
  • 2 tsp Salt

Green Beans

  • 1 bag Steamfresh Frozen Green Beans
  • Salt and Pepper to taste

Sides:

  • 5 Greek Pita
  • 5 Tbs Sliced Cucumber
  • 5 Tbs Feta Cheese

Instructions
 

  • Slice thawed chicken into small cubes. Place into a large bowl and add 1 Tbs Extra Virgin Olive Oil, 1 tsp Garlic, 2 tsp Lemon Juice, 1 tsp Thyme, 1 tsp Dijon Mustard, 1 tsp Salt, ¼ cup Chicken Broth. Let the chicken marinate for 20 minutes.
  • In a large microwave safe bowl add 2 cups minute rice, 1 ¾ cups Chicken Broth, ¼ cup Lemon Juice, 1 tsp Garlic Powder, 1 tsp Onion Powder, 1 Tbs Parsley, ¼ tsp Dried Oregano, ¼ tsp Black Pepper, ¼ tsp Cumin, 2 tsp Salt, stir to combine. Cover with a lid, leaving a small opening to vent. Cook for 9 minutes in the microwave. Once finished let it rest for 5 minutes with the lid on before fluffing with a fork.
  • Spray cooking spray onto a skillet and turn the heat to medium high heat. Add the marinated chicken to the skillet. Cook for 4 minutes on one side, then after the first 4 minutes, turn the pieces of chicken over to the other side to cook for an additional 4 minutes. Make sure the internal temperature of the chicken is 165° when done cooking.
  • Place Steamfresh steamable green beans into the microwave and cook according to the package directions. Season with a little salt and pepper to taste.
  • Once everything is cooked, place 5 meal prep containers on the counter. Put equal parts chicken, rice, and green beans into each container. Make sure the lid is on tight. *Optional: Add a small container of 1 Tbs sliced cucumber and 1 Tbs Feta Cheese to each meal prep.
  • Store in the refrigerator for up to 5 days. When you’re ready to eat your meal prep each day, remove the small container of cucumber and feta cheese, then heat for 60 seconds in the microwave. Add the feta and cucumber over the top and enjoy!

Notes

You can put the small cucumber slices and feta cheese into separate small containers or a small Ziploc bag. Remove them from the meal prep container before reheating, and add to the top of the meal once it is hot.
If you are needing more calories you can add a Greek Pita to your Meal prep. Place in a Ziploc bag for easy grab and go. Once you heat up your meal you can place all the contents into the pita and enjoy!
